Make Ghanaian Nut Brittle with the Hairy Bikers

In this video diary, the Hairy Bikers - David Myers & Simon King - will recreate one of Ghana's little known secrets: Peanut Brittle. 

Ingredients

To create Ghanaian Peanut Brittle you will need:

  • 240g Castor sugar
  • 1 tbsp Butter
  • 200g Roasted peanuts
  • 1 Saucepan
  • 1 Baking tray
  • A roll of baking paper

Melt sugar.

You will need to melt the sugar and turn it into caramel. Take your sugar, pour it into a saucepan and place it on medium heat. As the sugar heats up it will slowly begin to melt and turn into a form of molasses. As the sugar begins to melt, slowly begin to reduce the heat to avoid burning.

Once sugar is melted, remove from heat.

Do not, I repeat, do not stir the sugar, until it has completely turned into liquid. Stirring before this stage will result in the sugar crystallising and turning into lumps. Once all the sugar has melted remove from the heat and begin adding the butter. Melt and stir the butter, until dissolved - be extremely careful during this point as the contents of the pan will be incredibly hot and could cause serious scalding and burns.

Add roasted peanuts.

Once the mixture is complete, add a small bowl of roasted peanuts and stir together. Once the nuts and sugar have combined, pour out the mixture onto a baking tray covered in silicone baking paper. Using two wet spoons begin turning the mixture into small balls.

Place in fridge.

The process is now complete and the brittle can now be placed in the fridge. Ensure that the balls are completely cool before consuming.
